• VITAMIN SOUP WITH CAULIFLOWER •

From the typical April and very useful vegetables you can prepare extremely healthy and delicious soup. For a fuller taste as a side dish you can add salad “Arkadiq”  to it – boiled potatoes, boiled eggs and pickles in a light mustard – mayonnaise sauce. NECESSARY PRODUCTS:

• a small cauliflower;

• one onion;

• two tablespoons of semolina;

• salt, pepper;

METHOD OF PREPARATION:

Chop the cauliflower into small pieces and put it in boiling salted water until soft. When it is ready, take it out of the pot and put the finely chopped onion in the water. While the onion is softening, chop the cauliflower into small pieces, season it with salt and pepper and return it to the pan. Add the butter, spices and milk. Wait for the soup to boil and immediately add the semolina, which will thicken the soup. Reduce the heat and allow the semolina to swell. Serve hot soup with finely chopped dill for spring taste and freshness.
